Did you crack open a can of chickpeas recently and now you are looking for recipes that use aquafaba (aka canned chickpea liquid)? In addition to the vegan, traditional, chewy chocolate chip cookie that I have posted on the blog, this lavender earl grey version is a must bake. These cookies are best the day after baking because they develop a soft, chewy texture that is unbeatable. Combine the to-die-for texture with the delicious and aromatic flavours of lavender and earl grey, and this recipe will be sought after by all.
Nobody will guess that these cookies are vegan aka dairy-free. They are rich in flavour and very satisfying. Just make sure you use culinary grade lavender and not the type used in soap! You only need a few pinches of lavender, so I recommend experimenting with other recipes. Maybe a lavender tea latte? I had one from Breka this weekend and it was pretty delicious.

Vegan Lavender Earl Grey Chocolate Chip Cookies

Ingredients:
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/2 cup melted vegan butter (or butter for non-vegan)
- 90 mL aquafaba
- 2 tsp vanilla extract
- 2 1/4 cup (270 g) all purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 2 earl grey tea bags (I used Twinings)
- 2-3 pinches of ground culinary lavender
- 120 g semi-sweet chocolate chips
Instructions:
- Whisk sugars, melted butter, aquafaba, and vanilla in a large mixing bowl until combined.
- Add flour, baking soda, salt, tea leaves from the two tea bags, and lavender and mix until just combined.
- Fold in chocolate chips.
- Refrigerate dough at least 30 minutes. This is a sticky dough, even after refrigeration.
- Preheat oven to 350F/180C.
- Scoop 50 g dough balls out and place onto parchment lined baking sheets. Leave space between dough balls for cookies to spread during baking.
- Bake for 12-15 minutes or until golden brown around the edges.
- Let cookies cool on baking sheets for 5 minutes then transfer onto a cooling rack to cool completely.
- Store at room temperature in an air tight container or freeze in a resealable bag.
