After seeing NotMilk advertised on Instagram, I was curious as to how the product compared to regular milk. My partner and I saw it on sale at Superstore for $4.50, so we picked up a carton of the whole variety. If you didn’t know, NotMilk was developed with AI technology and contains ingredients like pineapple juice, cabbage juice and pea protein. Interestingly, you can still smell and taste the pineapple juice. We found that it doesn’t froth as well as Earth’s Own Barista Oat or Soy does, but it has a smooth texture. The texture is more similar to dairy milk than any other regular nut milk, in my opinion. If you’re curious, it’s worth a try.

While it’s ok for tea lattes, I was curious to see how the product did in baked goods, so I made a vegan chocolate chip loaf. The loaf turned out delicious – my partner and I finished a loaf in 2 days! It reminds me of Mmmuffins chocolate chip muffins, if you remember that mall-chain which was popular in the 1990s. I’m thinking the pineapple juice in NotMilk adds a delicious subtle tropical, acidic fruit flavour to the loaf.

Vegan Chocolate Chip Loaf

Ingredients:
- 1 cup + 1 tbsp non dairy milk (I used whole NotMilk)
- 1 tsp apple cider vinegar
- 1/3 cup white sugar
- 1/4 cup oil
- 1 tsp vanilla extract
- 2 cups (240 g) flour (I used half all purpose and half whole wheat)
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/2 cup chocolate chips
Instructions:
- Spray or line a 9×5″ loaf pan. Preheat oven to 360F/185C.
- Whisk milk, vinegar, sugar, oil, and vanilla extract in a medium-sized bowl until sugar has dissolved.
- Add flour, baking powder, baking soda, salt, and ground cinnamon to the bowl and mix until just combined. Mix in chocolate chips.
- Bake for 45-52 minutes. Cool on a wire-rack for 10 minutes before removing the loaf from the pan to the wire rack to cool completely.
- Store in an air-tight container for a few days or freeze individually wrapped slices.
